Can you tell we are now seriously involved in the recipe development component of our project?
We are soliciting favourite comfort food recipes from our staff, patients and community. We have taken some recipes from the original ‘Scarborough General Hospital’ menu, and we have some new recipes, created by our team of chefs using fresh, local ingredients.
Before any recipe is trialed in small quantity, it is assessed for:
If acceptable, it is then produced in small quantity so it can be further assessed for production, according to meal times and work schedules and, of course, for taste.
If still acceptable, the recipe will be scheduled for standardization (i.e., ‘scaling up’ or ‘exploding’) at which point it will be served to our patients. We will send a questionnaire when the new item is sent to patients and they will tell us if they like it. This will be the final assessment!
It will then be put on the new menu to be rolled out when we begin the bedside choice style of service.
